Luscious, sweet,
gorgeous and
yummy... the
lemon cake with
berry compote
and honeyed
goat cheese that
I made is
outrageously
good.

Try it. It's easy
to make  and
you'll love it!

cake

3 cups all purpose flour
1 tsp baking powder
3/4 tsp salt
1/2 tsp baking soda
3/4 cup buttermilk
3/4 cup fresh lemon juice, divided
1 cup unsalted butter, softened
2 1/2 cups sugar, divided
5 large eggs
3 tbs packed finely grated lemon peel
2 tsp vanilla extract

honeyed goat cheese

8 oz softened goat cheese
1/4 cup honey
1 tsp vanilla extract
3/4 cup whipping cream, whipped to
soft peaks

in food processor blend cheese, honey,
and vanilla until completely smooth
pour into medium bowl
gently fold in whipped cream
chill at least 30 mins

mixed berry
compte

3 half pints of
assorted berries
1 1/2 cups
halved
strawberries
1/2 cup sugar
1 tsp fresh lemon
juice

mix all
ingredients in a
medium
saucepan, let sit
15 minutes
cook over
medium heat
until sugar
dissolves, a light
syrup forms, and
berries soften
slightly--about 10
minutes

preheat oven to 350, butter and flour a 10 spring form pan

1. whisk flour, baking powder, salt, and baking soda in med
bowl
2. combine buttermilk and 1/4 cup lemon juice is small bowl
3. in electric mixer, beat butter until smooth then slowly add
2 cups sugar, beat until well blended; beat in eggs one at a
time; add lemon peel and vanilla
4. beat in dry ingredients in 4 additions alternately with
buttermilk mixture in 3 additions
5. pour into prepared pan, bake until golden brown and
slightly cracked on top and tester inserted into center comes
out clean, about 1 hour
6. in small saucepan combine remaining 1/2 cup sugar and
1/2 cup lemon juice over low heat until sugar dissolves and
syrup forms
7. transfer cake to cooling rack, cool for 15 minutes
8. working in batches, slowly spoon syrup over cake, allowing
it to soak in before reapplying
9. completely cool, remove side of pan

both the compote and honeyed goat cheese are great on
pancakes or as part of an ice cream sundae

That domestic goddess part of me is so loving my new Viking ovens.
